INGREDIENTS:

  • 1 (17.3-oz) package puff pastry, defrosted
  • 1¼ cup pizza sauce
  • 1 (5-oz) package mini pepperoni
  • 1½ cups shredded mozzarella cheese  (freshly shredded cheese mels better than pre-shredded.)
  • 2 Tbsp Italian Seasoning

DIRECTIONS:

  • Preheat oven to 400°F. Line baking sheets with parchment paper. Set aside.
  • Unfold pastry sheets. Cut each sheet into 9 squares.
  • Spread about 1 Tbsp of pizza sauce over the puff pastry. Arrange cheese and pepperoni, diagonally, down the pastry squares.
  • Sprinkle with some of the Italian seasoning. Fold two opposite corners of each square over the filling and press edges to seal. Place on prepared baking sheet.
  • Bake 15-18 minutes, until golden brown. Serve warm or at room temperature.

Can assemble pizza puffs and freeze unbaked for later. There is no need to thaw the puffs before baking. Simply add a few minutes to the cooking time.

INGREDIENTS:

  • 12 wonton wrappers
  • spray oil or olive oil and a pastry brush as needed
  • ½ cup pizza sauce (spaghetti sauce works in a pinch!)
  • ¼ tsp Italian seasoning
  • 2-3 oz shredded mozzarella cheese   (freshly shredded  melts better than pre-shredded)

DIRECTIONS:

  • Pre-heat oven to 365° and spray a muffin tin with nonstick spray (or use a pastry brush to brush the cups lightly with oil.)
  • Layer two wonton wrappers per cup, rotating the second wonton square so each cup looks like a star and covers the whole muffin cup.
  • Bake for 5 minutes.
  • Remove crisped wontons from oven and divide pizza sauce between 6 of the cups, spooning a little into the bottom of each wonton cup.
  • Sprinkle with Italian seasoning.
  • Top each cup with grated mozzarella and pepperoni (or choice of toppings from the list below.)
  • Bake for an additional 10-15 minutes or until the sauce is hot and the cheese is melty.
  • Add any additional toppings or garnish as you please.

YOUR CHOICE OF TOPPINGS (diced):

  • mushrooms
  • bell pepper
  • onion
  • basil
  • diced tomatoes
  • olives
